There are a few non melters in the family, these include, Cottage cheese, ricotta, Indian Paneer and Feta. Goats cheese is not a great melter but is awesome and can be used. So get the right cheese, please stay away from them plastic wrapped bright orange bits of plastic, they really are not good, get your bread right and enjoy.
