No one has time each and every day to prepare a pot of homemade soup for lunch but there is something about homemade soup that sooths us when we are sick. This Hearty Delicious Clam Chowder Soup is one of those dishes that makes you feel loved. I hope that you will give it a try.

Hearty Delicious Clam Chowder Soup

4 slices of bacon (diced)
3 tbsps of butter
2 cloves of garlic (optional)
1 medium onion diced
1 medium carrot grated or diced fine (optional)
1 rib of celery diced (optional)
1/2 tsp of dried thyme
1 tbsp dried parsley or fresh
3 tbsps flour
1 cup of milk
1 cup of chicken stock
2 cans whole baby clams with the juice reserved
1 bay leaf
2 red potatoes diced (any potato works but reds don't get mushy)
1 cup of half and half to finish

In a big heavy bottom pot add the diced bacon, stir and brown and then put the cooked bacon on a paper towel to drain. See how much bacon fat is left in the pan. It should be about 1 tbsp. Add the butter to the pot and stir until its melted bringing the bits from the bottom of the pot. Add the celery, carrot, onion and garlic to the pot and continue stirring until the vegetables start to soften. Now add the bay leaf, thyme and dried parsley. At this point add the flour in and stir until the flour disappears. Time to start adding the liquid. First add the chicken stock and then the milk, stirring between each addition and bringing back to the boil. Add the diced potatoes and the reserved clam juice. Cook stirring pretty regularly until the potatoes soften. Time to add the finishing touches. Add the clams, the cup of cream and the reserved bacon. Bring back up to the simmer and simmer for 2 to 3 minutes. It's time to serve and will serve 4 big bowls of soup.
