The aromatics of the truffle is a dead giveaway that you're going to get a really good truffle. If it smells good, observe the outside. You don't want too many holes in it. You don't want it broken, if you can help it. Sometimes all you have are broken truffles, so pick from the best of those. It should feel very dense and firm to the touch. There should be a bit of marbling on the inside of your truffle. If it's white through and through, it's probably not going to have a whole lot of flavor to it. When you buy a fresh truffle, eat it as soon as possible. As soon as they're picked out of the ground they're losing their aromatics.
