Nut roast or loaf and the word Vegan in the same sentence, to most people means tasteless, bland food. Well not this one, first off you for sure do not have to be vegan to enjoy this. All you pork chop juicy steak grilled lamb lovers would eat this and come back for more. It is totally understandable why people have this view on the nut roast, it has a real 70s 80s vibe about it, a bit like a prawn cocktail really, see both, all the rage back in the day now nobody eats them. In both cases it is partly because they where both not done very well at the time. A good prawn cocktail is still big in out kitchen. Anyway enough fishy meaty talk lets get vegan. So for us it is all about getting loads of flavour in at the start. This one we could say is Italian, Olive oil, onions, garlic, touch of chilli, oregano, basil, tomatoes, fresh parsley, you get the idea. We have sesame seeds, pine nuts, peanuts, sunflower seeds, vegan breadcrumbs and cashew nuts in the mix. So lets say we wanted to go in Thai direction, we would add galangal, lemongrass, thai basil, soy sauce, sesame seed oil, garlic, ginger etc. it is all out getting that flavour in at the start. No need unless you want to just have it vegetarian, add eggs, butter or cheese, of course these are great if you are not vegan. So lets have less of the horrid chunks of bread with a few bland nuts and salt n pepper, lets get stuck in and make a really delicious roast that is of course healthy but more importantly TASTY. other things that can work really well include adding a touch of horseradish or wasabi, mustard, tahini, curry spice and also try walnuts, oats, tef, tofu, water chestnuts, bamboo shoots or maybe some grated potato, zucchini, parsnips, carrots, beets or even some olives. play around make it tasty and good for you.
