Tuna niçoise with green olive & lemon dressing
Serves 4 Prep 15 mins (+ cooling time) Cooking 10 mins
425g can John West Chunk Style Tuna in Olive Oil Blend, drained reserving oil
12 pitted green Sicilian olives
½ bunch flat-leaf parsley, coarsely chopped
1 lemon, zested, juiced
1 tsp Dijon mustard
1 tsp honey
350g green beans, trimmed
4 Coles Australian Free Range Eggs
400g can Edgell Black Beans, rinsed, drained
3 vine-ripened tomatoes, cut into wedges
1 Place the reserved oil from the tuna, olives, half the parsley, lemon juice, mustard and honey in a food processor. Process until mixture is smooth and well combined.
2 Cook green beans in a saucepan of boiling water for 2 mins or until bright green and tender crisp. Use a slotted spoon to transfer to a heatproof bowl. Set aside to cool.
3 Meanwhile, cook the eggs in the saucepan of boiling water for 7 mins. Transfer to a bowl of iced water. Set aside until cool enough to handle. Peel. Cut into wedges.
4 Place black beans in a large bowl. Add half the tuna with the tomato, green beans and remaining parsley. Drizzle with half the dressing. Gently toss to combine.
5 Divide the tuna mixture among serving bowls. Top with the egg and remaining tuna. Drizzle with the remaining dressing and sprinkle with lemon zest.
