Beef & potato curry
Serves: 4 Prep: 20 mins Cooking: 1 hour 50 mins
2 tbs olive oil
500g Coles Australian Beef Chuck Steak, cut into 2cm pieces
1 brown onion, finely chopped
2 tsp grated ginger
1 garlic clove, crushed
2 tsp curry powder
500g potatoes, peeled, cut into 2cm pieces
2 cups (400g) long-grain white rice
1/3 cup (95g) Greek-style yoghurt
1. Preheat oven to 150°C. Heat half the oil in a large saucepan over medium-high heat. Cook the beef, in 2 batches, for 4-5 minutes or until browned. Transfer to a plate.
2. Heat remaining oil in the pan over medium-high heat. Add the onion and cook, stirring, for 4-5 mins or until the onion softens. Add the ginger, garlic and curry powder. Cook, stirring, for 1 min or until aromatic. Add the potato and stir to coat with the spices.
3. Return the beef to the pan with 2½ cups (625ml) water. Bring to the boil. Cover and bake for 11/2 hours or until beef is very tender. Season.
4. Meanwhile, cook the rice following packet directions.
5. Serve the curry with rice and yoghurt.
