When most people think about simple syrup they think about boiling sugar and water on the stove but that actually begins to change the chemical structure of the sugar, making the syrup a little bit thinner in viscosity and less rich in mouth feel. Instead, cold infuse your simple syrup. Take a bottle. Put equal parts, by weight, sugar and water. Throw a cork on it. Shake it several times over the next five minutes or so, until the sugar is dissolved. It's already cool and ready to be mixed into drinks. There's no clean up and you can store it in the bottle that you've made it in.
