People are always asking us how we make our simple vegetarian soups and are amazed that there are only five ingredients in them. You're going to make a parsnip soup. So first, saute an onion in a little bit of olive oil and then take peeled and diced parsnips, add that to the onion. Saute until softened and releases its moisture and loses a little bit of volume. Then add water to barely cover. So the key to making a delicious soup is to cooking the vegetables through when they're just tender. Season with a little cream, salt, sherry vinegar, puree it together and the soup is ready to serve. It works with any vegetable you'll have laying around. Even just doing it with onions is delicious.
