If you want to make a really healthy soup that still tastes rich and creamy, the secret is non-fat milk powder. All you do is cook up silky textured vegetables like roasted red peppers, sauteed onions, lentils, crushed tomatoes; simmer all that together until they're really, fall apart, tender. Then you puree it in a blender with your non-fat milk powder and you have this fantastic soup that tastes really rich but it's healthy.
