You know how sometimes when you cook an egg you get this green ring around the yolk and it's kind of rubbery and it's stinky? Well that's because you have hard boiled your egg. You don't actually ever want to boil an egg. What you want to do is put them in a pan cold. Cover them with cold water by at least an inch and then you bring them just to the boil and then you turn it way down and let them simmer for ten minutes. Turn off the heat. Put your eggs in ice water for just a minute. Take them out. Crack them all over. Put them back in the ice for five minutes and then they'll peel beautifully. They'll be this gorgeous golden yellow color inside. The whites are super tender and they smell great.
