Fancy Holiday Bread
Instead of candied fruit you can use raisins also.
Dough
1 tablespoon yeast
1/4 cup warm water
1/2 cup Lukewarm milk
3 tablespoons sugar
4 tablespoon softened butter
1 and 1/2 teaspoon salt
1/2 teaspoon ground green cardamom
2 eggs at room temperature
1 teaspoon grated orange peel
3 and 1/2 cups all purpose flour.
Cherry-Almond Recipe
And sugar glaze recipe follows
Dissolve yeast in warm water add all the ingredients except flour. Mix the liquid well then add flour, 1 cup at a time until all 3 1/4 cup of flour is incorporated. Knead the dough well. Lightly oil the dough container and dough. Cover the dough and let it rise in a warm place for an hour and a half until doubled.
While dough is rising, make cherry and almond filling.
In large bowl with electric mixer or by hand mix
4 tablespoon butter
1/4 cup all purpose flour
two tablespoon sugar
Add 3/4 cup skin removed finely chopped almonds
2/3 each red and green chopped candied cherries
3 /4 teaspoon almond extract.
Roll the dough on a lightly floured surface. Spread the filling evenly leaving 1 inch on all four sides. Spread the filling. Top it with some more chopped cherries. Roll it tightly from longer side brush some water on the edge to seal. Using a floured sharp knife cut the dough in the middle into the lengthwise pieces. Twist the dough keeping the filled side exposed. Join the ends by pressing tightly to make a circle. Let it rise on a parchment lined cookie sheet greased for 45 to 60 minutes uncovered. Bake at 375 F or 190 C degrees in a preheated oven for about we 20 minutes or till golden brown.
For glaze
in 1 and half teaspoon lemon juice add 2/3 cup powdered sugar and 3 teaspoon water mix till smooth. While still warm apply glaze. Eat with or without a dab of butter.
