Kudzi’s Unique Fried Rice
Serves 4 Prep 10 mins Cooking 30 mins
1 cup (200g) brown rice
1 cup (200g) white rice
300g Coles RSPCA Approved Australian Chicken Breast Fillet
1 tbs olive oil
½ tsp salt
2 carrots, peeled, finely chopped
1 cup (120g) frozen baby peas
1 small red capsicum, finely chopped
1 tbs soy sauce
spring onion, thinly sliced, to serve
1. Boil the brown and white rice separately following packet directions.
2. Meanwhile, cut the chicken into even-sized pieces or strips.
3. Heat a large frying pan over medium heat. Add oil to the wok or pan, then add the chicken and stir-fry until the chicken is browned.
4. Add the carrot, peas and capsicum to the pan. Stir-fry until vegetables are soft and cooked through.
5. Add the cooked brown and white rice to the pan and stir until all combined.
Stir in the soy sauce. Serve warm and sprinkle with spring onion.

• Use any of your favourite meats and veggies in this recipe.
• To give the fried rice lots of colour and flavour, try to use a combo of different coloured veggies.
• For a tasty twist, try it with quinoa or black rice.
