Fried eggplant absorbs oil like the desert soaks up rain. So if you want eggplant that's not a total grease bomb, try steaming it in water first. Then uncover it. Paint one side with a little olive oil. Turn it over. Paint the other side and let it cook until it's nice and golden brown. You can use this eggplant on sandwiches. You can use it in pasta and you can make dips with it. Not only is it healthier for you, you also save a lot of expensive olive oil and you get eggplant that's much fresher and sweeter tasting.
