INGREDIENTS ½ onion, sliced 1 fennel bulb, sliced 4 garlic cloves. sliced 1 (15.5 ounce) can white beans, drained 1 lemon 2 cups vegetable stock 2 cups dried pasta 1 (13.5 ounce) can coconut milk 1 cup sliced fresh basil Salt and black pepper, to taste INSTRUCTIONS 1. In a Dutch oven or large pot, add the onion, fennel and garlic. Sauté on medium-high heat until soft and slightly caramelized, about 3-5 minutes. 2. Add half of the white beans and mash them in with a fork to give the sauce more body and richness. 3. Add in the remaining beans whole. Zest the lemon directly over the pot, then slice the lemon in half and juice both halves into the pot. 4. Add the vegetable stock and pasta, then stir in the coconut milk. 5. Cover and reduce the heat. Simmer with the lid on for 15-20 minutes, stirring occasionally. Halfway through, add the sliced basil. Season with salt and pepper to taste. 6. Once the pasta reaches desired doneness, serve immediately. 7. Enjoy!
