When peaches are perfectly in season you know it's the middle of summer, so we thought we'd celebrate one of our favorite stone fruits with an easy DIY cookie that's sure to be the centerpiece of your next party table. Plus you're friends will never know how easy they are to make (unless you tell them) and will be impressed by your peach making skills.
Easy DIY Peach Cookies
From Nicole Iizuka, POPSUGAR Food
1/4 cup granulated sugar
2 tbsp. milk
6 drops yellow food coloring
4 drops red food coloring
24 Nilla wafers
1/4 cup peach jelly
12 mint leaves
Special equipment:
Food-safe paint brushes
Place granulated sugar into a low dish and set aside. In two small bowls add 1 tablespoon of milk to each bowl and food coloring. Swirl gently but do not mix.
Using a food-safe brush paint the tops of each cookie with a mixture of yellow and red milk and then dip the whole top of the cookie in granulated sugar. Continue with the rest of the cookies.
Take one cookie and flip it over. Spread an even layer of peach jelly on the non-decorated side of thecookie and sandwich it together with another cookie. Place a mint leaf in the center. Repeat with the remaining cookies.
Yield: 12 Servings
Cook Time: 20 Minutes
