The classic vinaigrette is three parts oil to one part vinegar. You know what? When you have three to one it's got this huge amount of oil in it so it leaves this residue, which I call lipstick, on your lips where you constantly have to wipe it off. I prefer two to one. It's a better ratio. It's got a better balance of flavor. It's going to be brighter. It's not going to be so oily. Depending on the salad, I also like to use one to one if I'm going to use a really high end olive oil and a really aged vinegar.
