Most salad dressing has quite a bit of oil in it. You can make a great low-fat salad dressing by replacing a lot of the oil with a vegetable juice reduction. Pour your vegetable juice, I like to use carrot, that's one of my favorites, into a big wide frying pan so it evaporates faster and then you simmer it until it's reduced to a silky syrup, then you just whisk in your choice of seasonings. I like to use miso and a little grated ginger, a little bit of grape seed oil, and some rice wine vinegar. Pour it on your salad, toss gently and you have this great low-fat salad dressing that has tons of flavor and coats every single leaf of your salad.
