How we do family dinners around here ????️ Sweet Potato Nachos

First up, I make slow cooker salsa chicken which is just chicken and salsa in a slow cooker on low for 6 hours, shred and let sit in juice on low for 45 minutes-1 hour.

For the boys, I made nachos using the chicken with tortilla chips, cheese, black beans, guacamole and lettuce.

For nick and myself, I sliced sweet potatoes 1/4-1/2 inch thick, brushed with EVOO, ????, pepper and garlic and roasted for 45-60 minutes at 425F. I would have used my air fryer but it’s small and we have a new kitchen so might as well use the fancy oven. I topped nicks sweet potatoes with cheese. Then we topped the “chips” with chicken, guacamole, mango salsa, black beans and lettuce.
