For this healthy meal prep for the week, I went grocery shopping at Target!? Not my typical grocery shopping spot, but I found some surprising gems in this Target grocery haul. It can be done!
Best of all, if you’re a fan of freezer meal prep and make ahead freezer meals, ALL of these Target meal prep recipes are also freezer-friendly! Altogether, this weekly meal prep for two covers 5 days of healthy meals, featuring 4 easy freezer meals recipes for breakfast, lunch, and dinner.
First, Paleo, grain-free (& freeze-able!) healthy breakfast cookies to start the day. Then for lunch meal prep, I’ve got gluten free freezer sandwiches and simple meal prep salads. And finally, 2 healthy dinner ideas for some variety: mini healthy lasagna casseroles, and one of my FAVORITE crockpot freezer meals of all…my cilantro lime slow cooker chicken recipe!
You can also double these meal prep freezer meals if you prefer to prep in larger batches. And as always, get creative with these healthy meal prep ideas and make them your own!

2 lbs boneless skinless chicken breast, cubed
1 red bell pepper, chopped
1 yellow bell pepper, chopped
2 cups chopped zucchini
1 cup red onion, diced
1 bag (16 oz) frozen corn
1 can (15 oz) black beans, drained & rinsed
2 garlic cloves, minced
1 cup broth
1 cup cilantro, chopped
2 limes, juiced
1 tsp cumin
salt & pepper, to taste
Cook on low heat in slow cooker or crockpot for 6 hours, until chicken is tender.
