Chia seeds are not only delicious, they are a nutrition powerhouse. This chia pudding is made with coconut milk, giving it a tropical creamy taste (RECIPE BELOW). Topped with fresh strawberries and mandarins, you will want these chia seed delights for breakfast and pudding.

COCONUT CHIA PUDDING
Serves 4 Prep 15 mins (+ 6 hours setting & 30 mins standing time)
¹⁄³ cup (70g) white chia seeds
400ml can light coconut milk
¼ cup (60ml) agave syrup or maple syrup
2 mandarins, peeled, segmented
250g strawberries, halved
1. Combine the chia seeds, coconut milk and 2 tbs of the agave syrup or maple syrup in a medium bowl. Cover with plastic wrap. Place in the fridge for 6 hours or until the mixture thickens.
2. Combine the mandarin and strawberry in a bowl. Add the remaining agave syrup or maple syrup and stir to combine. Set aside for 30 mins or until the strawberry releases its juice.
3. Spoon the chia mixture among serving bowls or glasses. Top with the strawberry mixture.
