BEEF DUMPLING, SOY & SESAME BROTH
Serves 4 Prep 10 mins Cooking 20 mins
2 Massel 7’s Stock Cubes Chicken Style
5cm-piece ginger, cut into matchsticks
1 garlic clove, bruised
1 tsp Chang’s Sesame Oil
1 tbs Coles Soy Sauce
3 tsp ABC Original Chilli Sauce (optional)
2 spring onions, green and white parts separated, thinly sliced
425g can Coles Whole Champignons (mushrooms), drained, thinly sliced
227g can Coles Sliced Water Chestnuts, drained, thinly sliced
1 bunch bok choy, quartered lengthways
250g pkt Coles Mini Beef Dim Sims
1 long red chilli, seeded, thinly sliced (optional)
1. Place the stock cubes, 8 cups (2L) water, ginger, garlic, oil, soy sauce, chilli sauce, if using, and white parts of spring onion in a large saucepan. Bring to the boil over high heat. Reduce heat to low and simmer for 10 mins.
2. Strain through a fine sieve into a jug, discarding solids. Return liquid to the pan. Bring to the boil.
3. Add mushroom, water chestnut, bok choy and dim sims. Cook for 5 mins or until dim sims are cooked through.
4. Serve with chilli, if desired, and remaining spring onion.
