CREAMY PENNE CARBONARA
Serves 4 PREP 10 mins COOKING 10 mins
375g Coles Australian Penne
20g Coles Australian Butter
200g Don Middle Bacon Rashers, rind removed, thinly sliced
300mls Coles Thickened Cream
2 Coles Australian Free Range Eggs, lightly whisked
1/3 cup (25g) Coles Shredded Parmesan
1 tbs coarsely chopped fresh chives
1. Cook the pasta in a large saucepan of boiling water following packet directions until al dente. Drain, reserving ¼ cup (60ml) of the cooking liquid.
2. Meanwhile, melt the butter in a large frying pan over high heat. Cook the bacon, stirring, for 3-4 mins or until crisp.
3. Add the cream. Bring to the boil. Reduce heat to low and simmer, uncovered, for 2-3 mins or until sauce thickens slightly. Add the reserved pasta cooking liquid. Remove from heat. Stir in the eggs and cheese.
4. Add the pasta to sauce and toss to combine. Serve the pasta sprinkled with chives.
