Veggie Fried Quinoa 
Servings: 4
Calories: 588/serving 
1 tbsp oil 
1 small onion chopped 
1 clove garlic, finely chopped 
1 cup frozen peas and carrots 
1 cup broccoli florets, chopped 
3 eggs (optional) 
3 cups cooked quinoa 
1 tbsp soy sauce 
1 tsp sriracha (optional) 
2 green onions, chopped 
In a large wok or frying pan, heat oil over medium heat.  Add onion and cook, stirring frequently, until translucent.  Add carrots, peas and broccoli and cook for 2 or 3 minutes until they begin to soften.  Add garlic and cook for an additional 30 seconds.  Push veggies over to one side of the pan and on the other side of the pan scramble the eggs.  Combine the veggies and eggs and stir in cooked quinoa. Add soy sauce and sriracha to taste.  Finish with green onions.
