When you're chopping vegetables you have all these leftover bits of vegetable. You could compost them, but one really easy thing to do is to put them in a zip lock in the freezer. You can have the same zip lock back and add to it. And then, when you want to you can pull it out, put it in a pot with water and make really easy vegetable stock out of it.
