Apple Pie Oatmeal
1 tablespoon butter
1 apple, cored and diced
1 tablespoon brown sugar
1 cup old-fashioned rolled oats
2 cups apple cider (non-alcoholic)
1 teaspoon apple pie spice
1/4 cup chopped toasted walnuts
In a medium saucepan, melt the butter over medium-high heat. Add the apple and brown sugar and cook, stirring often, until the apples begin to soften, about 5 minutes. Add the oats, apple cider, and apple pie spice. Stir and bring the mixture to a boil. Reduce the heat to medium-low, cover, and cook, stirring occasionally, for about 5 minutes.
Serve immediately topped with walnuts.
Pumpkin Spice Oatmeal
1 cup old-fashioned rolled oats
1 cup water
1 cup milk
1/2 cup pumpkin puree
2 tablespoons maple syrup
1 teaspoon pumpkin pie spice
1/2 cup vanilla Greek yogurt
1/4 cup pepitas
In a medium saucepan, combine the oats, water, milk, pumpkin puree, maple syrup, and pumpkin pie spice. Stir and bring the mixture to a boil over medium-high heat. Reduce the heat to medium-low, cover, and cook, stirring occasionally, for about 5 minutes.
Serve immediately topped with yogurt and pepitas.
Chai Spice Oatmeal
1 cup old-fashioned rolled oats
1 cup black tea
1 cup milk
2 tablespoons maple syrup
1/2 teaspoon vanilla extract
1/4 teaspoon cinnamon
1/8 teaspoon ginger
1/8 teaspoon cardamom
1/2 cup vanilla Greek yogurt
In a medium saucepan, combine the oats, tea, milk, maple syrup, vanilla extract, cinnamon, ginger, and cardamom. Stir and bring the mixture to a boil over medium-high heat. Reduce the heat to medium-low, cover, and cook, stirring occasionally, for about 5 minutes.
Serve immediately topped with yogurt and pistachios.
