To answer this question, EAT gathered 37 of the planet’s foremost experts who, for the first time ever, propose scientific targets for what constitutes a healthy diet from a sustainable food system – as published in the EAT-Lancet ‘Food in the Anthropocene’ report. These targets have polarised opinions across the food, farming and public health sectors. One of the most widely touted challenges to the report is the applicability of the global set of recommendations at a local level – how might different countries respond?
