Betty demonstrates how to make Crispy Crust Baked Chicken Breasts. This recipe makes crust-ed chicken that is baked, not fried.
Crispy Crust Chicken Breasts (Baked)
3 pounds uncooked boneless, skinless chicken breast meat, trimmed and cut into serving-sized pieces
salt and pepper, to taste
mayonnaise, as needed to cover chicken
finely-crushed cornflakes, as needed to cover chicken
cooking oil spray
Season chicken pieces lightly with salt and pepper on top and bottom. With a pastry brush, coat chicken pieces with mayonnaise (top and bottom and all around). Roll pieces in finely-crushed cornflakes, pressing down to make the coating stick to the chicken. Place coated chicken pieces in a 10-inch by 15-inch by 1-inch baking pan that has been sprayed with cooking oil spray. Bake for 1 hour and 15 minutes in a 350 degree (F) oven or until tender and no pink is showing. Serve hot or chilled. Delicious! --Betty :)
