Betty's Healthy and Flavorful Quinoa Salad

Betty demonstrates how to make Healthy Quinoa Salad. This is a nutritious blend of quinoa, tomatoes, black beans, and green onions, topped with a cumin-lime dressing. I found this recipe in Arritta Morris's food column in my local newspaper, The Richmond Register. I think it's great!
1 cup quinoa
2 cups water
¼ cup olive oil
4 tablespoons lime juice (juice of two limes)
2 teaspoons ground cumin seed
1 teaspoon salt
½ teaspoon red pepper flakes
1 ½ cups halved cherry tomatoes
1 (15-ounce) can black beans, drained and rinsed
5 green onions, finely chopped
¼ cup chopped fresh cilantro (I omitted this ingredient, but it is great if you have it.)
salt and black pepper, to taste
Bring quinoa and water to a boil in a saucepan with 1 teaspoon of salt. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, about 10 to 15 minutes. Dressing: Whisk olive oil, lime juice, cumin, salt, and red pepper flakes together in a bowl. Combine quinoa, tomatoes, black beans, and green onions together in a bowl. Pour dressing over quinoa mixture and toss to coat. Stir in cilantro (if used). Season to taste with salt and pepper. Serve immediately or chill in refrigerator. Enjoy! Love, Betty ♥♥♥
