Betty demonstrates how to make a Tomato, Cucumber, and Avocado Salad. This is a healthy salad consisting of tomato, cucumber, avocado, red onion, and cilantro with a light lemon-olive oil dressing.
Tomato, Cucumber, and Avocado Salad
1 pound fresh roma tomatoes, chopped
1 medium cucumber, chopped
½ medium red onion, sliced into half-slices
2 avocados, chopped
¼ cup fresh cilantro, chopped
2 tablespoons light-tasting olive oil
2 tablespoons lemon juice
freshly ground coarse sea salt, to taste
freshly ground black peppercorns, to taste
Place prepared tomatoes, cucumber, avocadoes, red onion, and cilantro in large salad bowl. Drizzle with olive oil and lemon juice. Season with freshly ground salt and pepper. Toss gently. Serve immediately or cover with plastic wrap and refrigerate until serving time. This is a great, healthy salad. Enjoy! --Betty :)
