Betty demonstrates how to make End of Summer Vegetables with Cucumber Dressing. This salad is a great way to use up some of your garden vegetables.
End of Summer Vegetables with Cucumber Dressing
1 medium cucumber
3 medium tomatoes
1 medium onion
½ medium green bell pepper
½ medium red bell pepper
3 ribs celery
Chop all ingredients into ½-inch squares. Place in a large bowl and stir. Pour ½ bottle of Cu-cumber Salad Dressing (or more) over the vegetables and stir until dressing coats vegetables thoroughly. Refrigerate overnight in order for the vegetables to absorb flavor from the Cucumber Dressing. Serve as a salad or a side dish. To store, cover with plastic wrap or place marinated vegetables in a jar with a screw-on top and refrigerate. Enjoy! --Betty
