You could also use candy eggs, clean dry real eggs, or plastic eggs to theme these for farm or barn parties, or just to fool your guests with their 'egg; desserts :)

Lemon Cheesecake Recipe (No bake)
1 tin of sweetened condensed milk
250g packet Philadelphia Cream Cheese, softened
Juice of 2 lemons

In a large mixing bowl, add the softened cream cheese.
Beat with an electric mixer until smooth.
Add the sweetened condensed milk.
Beat until smooth.
Add the juice of 2 lemons and beat again until smooth and creamy.
Refrigerate 1 hour
Pipe into eggs, add lemon curd 'yolk' and return to fridge until set.

Lemon Curd:
You can make your own using this recipe, otherwise I have just used pre-made store-bought lemon curd in a jar.

200 ml (3/4 cup) fresh lemon juice
1 tablespoon finely grated lemon rind
185g (3/4 cup) sugar
3 eggs
125g unsalted butter, cut into cubes

Combine all ingredients in a 2 litre saucepan.
Cook over medium-low heat whisking until thick enough to hold marks from whisk, and first bubble appears on surface, about 6 minutes
Refrigerate until set. Store leftovers in clean sterilised jars (also great for lemon meringue pie base!)

Other flavour suggestions include white chocolate mousse, cheesecake with passionfruit curd or mango curd&lemon lime cheesecake.
