RECIPE:
Yields: 2 dinner servings
4 appetizer servings
Chicken:
About 1lb of Chicken Tenders
1/2 tsp of garlic salt
1/2 tsp of onion powder
1/4 tsp of pepper
1/2 tbsp of olive oil
About 1/4 cup of chicken stock
Kale:
1 bunch of Kale, washed
3 tbsp of olive oil
1/2 tsp of salt
1/4 tsp of pepper
2-3 tbsp of Lemon juice
1/4 cup of grated parmesan
1 tbsp of pine nuts (or shaved almonds)
Garnish:
1 tbsp of grates parmesan
a few more pine nuts
lemon slices
DIRECTIONS:
Wash your kale, tear off the leaves from the stem, and add it to a large bowl. Add your olive oil, salt, and pepper to the bowl and toss the kale, to spread out the oil and seasoning. Place the kale onto a baking sheet and set aside.
Preheat your oven to 350F. Place your olive oil in an oven safe sauce pan and turn on high heat. Season your chicken on both sides with the garlic salt, onion powder, and pepper. Once the oil is hot, place the chicken into the sauce pan and cook for one minute on each side, to form a crust. Add the chicken stock to the sauce pan. Then add your entire pan to your oven along with your kale. Cook your kale for 6 minutes and your chicken about 7-8 minutes or until the chicken is fully cooked.
Place your cooked kale back into the bowl and add our lemon juice, parmesan, and pine nuts. Taste a little and add more slat, pepper, lemon juice, or parmesan as needed. Plate your salad and add your chicken on top. Shave more parmesan on top of the chicken, and add a few more nuts. And it's ready to serve. Garnish with a few lemons for anyone who would like more.
