Homemade BBQ Chicken Strips
Skip the drive through and make these at home!
Ingredients:
Chicken and Marinade
2 chicken breasts
2 cups buttermilk
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon smoked paprika
1 tablespoon kosher salt
1 tablespoon hot sauce
Neutral oil, for frying
Flour Coating
3 cups all purpose flour
½ cup cornstarch
½ tablespoon garlic powder
½ tablespoon onion powder
½ tablespoon kosher salt
½ tablespoon ground black pepper
Sauces
Barbecue sauce
¾ cup sour cream
½ cup mayonnaise
½ cup chicken broth
1 teaspoon apple cider vinegar
1½ teaspoons dried dill
1½ teaspoons dried parsley
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon kosher salt
½ teaspoon ground pepper
Preparation:
1. Cut the chicken into strips. Mix together the buttermilk, garlic powder, onion powder, smoked paprika, salt and hot sauce to form the marinade. Toss the chicken in the mixture and let marinate for a few hours.
2. Whisk together the flour coating ingredients. Dip each chicken strip in the flour mixture, making sure it’s fully coated.
3. Fill a pot halfway with the frying oil. Heat to 350ºF. Fry the chicken strips for 5 minutes or until golden brown and crispy (internal temperature of chicken should be 165ºF.)
4. Place chicken strips in a bowl and drizzle with barbecue sauce. Toss to coat.
5. Make the homemade ranch: Whisk together sour cream, mayonnaise, chicken broth, vinegar, dill, parsley, garlic powder, onion powder, salt, and pepper.
6. Serve chicken strips with the ranch for dipping!
