Betty demonstrates how to make her Favorite Fried Chicken Tenders. These chicken tenders will be used in an upcoming recipe in Betty’s Kitchen.
Favorite Fried Chicken Tenders
2 ½ pounds uncooked chicken tenders
salt and pepper, to taste
2 cups flour
peanut oil for frying
Rinse chicken and blot dry with paper toweling. Salt and pepper chicken, to taste. Set aside. Pour flour into gallon-sized Zip-Lock bag. Set aside. Heat peanut oil in large skillet until very hot, approximately 350 degrees (F). Also, preheat oven to 400 degrees (F). Place a few seasoned chicken tenders in bag of flour and shake to coat. Use tongs to remove coated tenders from bag and place them individually into hot oil. Continue, until all chicken is in skillet, trying to keep the chicken in one layer, if possible. Let chicken tenders fry until they are beginning to brown on bottom side, then turn and brown other side. Place the skillet of chicken in a 400-degree (F) oven and continue to fry for 8 to 10 minutes on the bottom side, then turn each chicken tender over and fry 8 to 10 minutes longer, until other side is brown and crisp. Remove from the oven and transfer each fried chicken tender to a platter that has been lined with paper toweling. Immediately transfer to a nice serving plate and serve. Yummy! --Betty
