One of the most common problems people have with a steak is when they cook the steak that they may not cook it correctly. When you look in these cases and you see these steaks that are like an inch to an inch and a quarter thick, you're basically talking about, like on a barbeque grill, that is like seven to ten minutes a side. You really don't want the steak to be too undercooked because it'll be a little chewy. When you get to more of that pink consistency, that medium-rare, that's when you're going to get the most flavor and the best chew.
