When you're looking at your steaks, of course, what you're always looking for, for the most flavor, is the marbling of the steaks. If it has a lot of marbling and the marbling lines are too thin, as that fat dissolves, the meat has no chance to absorb that flavor. A little thicker in the marbling gives the meat an opportunity to absorb the fat and that's, of course, where you get that real juicy flavor that comes out of that steak.
