When you're looking at the chicken, first thing you want to see is you want to make sure that the skin has nice color to it. If the skin is too transparent, the chicken has been sitting around. Make sure yourself that the packaging is nice, it's tight, it's very clear, which is showing you it is a freshly done package, has not been sitting around, has not been handled by a lot of people. And if you're seeing a lot of blood in your package, you know that that package has been sitting on the shelf for quite a while.
