One of the great things about shopping at a farmers' market is the farmers can trim their vegetables in ways that give us the best value for our dollar. For instance, an artichoke, this one has all this beautiful purple marking and you can see that the head is really tightly closed. That's what you want to look for. The stalk has the same kind of meat as the heart inside and, you know what, when you look at the stalk if it's a big stalk it means that it has a big heart and we all like a big heart.
