Spiced Caramelized Pineapple Syrup:
8oz pineapple juice
1/2 cup granulated sugar
10 zips of freshly grated nutmeg
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
6 caramelized pineapple rings (just throw these in a pan and cook on medium heat until both sides are browned with just a little char)
Juice of 1 fresh lime
Combine pineapple juice and sugar in a small sauce pan, heat until sugar is dissolved, remove from heat. Add spices and lime juice. Combine the syrup with the caramelized pineapple in a blender, blend until smooth. Stain into jar or other storage container. Will keep in the fridge for about a month.
Espresso Chartreuse Swizzle
1 1/2 oz Green Chartreuse
1 oz espresso
3/4 oz fresh lime juice
1/2 oz spiced caramelized pineapple syrup
Ginger ale
Sprig of fresh mint for garnish
Freshly grated nutmeg for garnish
In a drink shaker filled with ice, add Chartreuse, espresso, lime juice, and syrup. Shake until well chilled and strain into a Collins glass filled with ice. Top with ginger ale. Garnish with a generous amount of freshly grated nutmeg and a sprig of fresh mint.
