Halloween Drink Recipes:
Salted Candy Corn White Hot Chocolate: Hot chocolate with a salted white chocolate candy corn syrup
Witchwork Shaken Espresso: Espresso shaken with muddled blackberries, rosemary, lemon juice, and smoked syrup
Undead in the Afternoon: Chilled absinthe and sparkling wine topped with espresso shaken with a lemon zest allspice syrup
Salted Candy Corn White Chocolate Syrup:
1/2 cup candy corn
1/2 cup white chocolate morsels
3/4 cup water
1/4 cup light corn syrup
Pinch sea salt (add to taste)
Combine all ingredients in a small pot and stir until mixture is smooth. Strain into storage container and let cool. Can be stored in refrigerator for up to two weeks. You can use this syrup to make hot chocolates or mochas, both hot and iced. Top drinks with whipped cream. This syrup is also excellent drizzled over vanilla ice cream.
Witchwork Shaken Espresso:
2 oz. Espresso
1/4 oz fresh lemon juice
1/2 oz. smoked simple syrup
3-4 blackberries
2 sprigs rosemary, set one aside for garnish
In an empty shaker, add rosemary and blackberries, muddle. Add ice, espresso, syrup, and lemon juice. Shake until well chilled, double strain into a rocks glass filled with ice, garnish with rosemary sprig, which you can briefly torch for spooky smokiness. Lemon Zest Allspice Syrup:
1/2 cup water
1/2 cup sugar
Zest of 1 lemon
1 tsp ground allspice
Combine ingredients in a pot and simmer 4-5 minutes to allow flavors to infuse. Strain into mason jar or storage container and cool. Can be stored in refrigerator for up to 1 month.
For the Cocktail:
1 oz Absinthe, chilled
Sparkling wine (Champagne, Cava, or Prosecco)
1/2 oz lemon zest allspice syrup
2 oz espresso
Lemon peel for garnish
Pour 1 oz of absinthe into coupe glass. Top with sparkling wine until absinthe takes on a milky, opalescent color. Combine 2 oz espresso, syrup, and ice in a shaker. Shake until espresso is chilled and frothy. Slowly pour over coupe glass, garnish with lemon peel. Sip slowly, while sitting down. You’re definitely going to need a nap.
