Here's a really easy way of reheating fully cooked sausage. Buy the sausage and keep it in the plastic cryovac bag. Drop it in simmering water and this is going to be really similar to sous vide, which sous vide is cooking in vacuum and retaining all that flavor. This is a really good method if you're having guests coming over, you don't know when people are going to arrive, you don't know when you'll sit down to dinner, because once it's simmered for ten minutes you can go ahead and let it sit in the water ten, twenty, thirty minutes. Take it out and you're ready to go.
