Everybody loves hummus but it's really hard to find fun ways to serve it at a party. Often it ends up in that bowl over to the side that's been double dipped all night and is not really appealing. Here's a fun and easy appetizer that'll impress your guests and taste great. Take and English cucumber, peel it, alternating between skin and no skin. Cut them into two inch pieces. Hollow out the center and fill it with hummus. For easy garnishing's, zest a lemon with fresh thyme, drizzled with a little extra virgin olive oil. Or, for a spicy option, you could add harissa with diced up bell peppers; the more colorful the better. Because this is a single serving appetizer, you never have to worry about that double dipped bowl of hummus again.
