Here is a great raw vegan spin on the classic yogurt, fruit, and granola dish, which is gluten free, dairy free, and looks gorgeous. Put raw cashews in your blender with a little bit of water. A little bit of vanilla essence. A little bit of agave and a touch of sea salt. Grind it for about ten seconds and it comes out like beautiful cream. And then you put together your raw nut mixture. I like to use almonds, walnuts, pumpkin seeds, sunflower seeds, flax seeds, anything that you like. Then you put your berries on the bottom of the glass. Lay your nuts on top of the berries. Get your cashew cream. Put a couple of generous dollops on top of the nuts. Layer some more nuts on top of the cream and top it with some berries. And there you go; gorgeous, edible center pieces that anyone can enjoy.
