Ginger & pineapple punch
Serves 8 Prep 10 mins
2 cups (500ml) pineapple juice, chilled
6 cups (1.5L) ginger beer, chilled
½ cup (125ml) white coconut rum (optional)
½ cup (125ml) passionfruit pulp
Mint sprigs, to serve
Thinly sliced strawberries, to serve
Thinly sliced pineapple, to serve
Crushed ice, to serve
1. Combine the pineapple juice, ginger beer, rum, if using, and passionfruit pulp in a large serving jug.
2. Top with mint, strawberry, pineapple and ice.
