INGREDIENTS:
Yields: About 4 cups
1 lb fresh fruit (if using strawberries, de-stem)
2 cups sugar
3 tbsp lemon juice
DIRECTIONS:
Blend fruit in a blender or food processor. Add the blended fruit, sugar, and lemon juice to a sauce pan. Bring to a simmer and cook until it reaches 22F or for about 7-10 minutes and the liquid starts to become thick.
NOTE: MAKE SURE TO PERIODICALLY STIR THE JAM AND KEEP AN EYE ON IT SO IT DOESN'T OVER FLOW FROM THE SAUCE PAN (THIS WILL HAPPEN IF YOU'RE NOT CAREFUL) Just reduce the heat if you see this happening.
Strain through a sieve into a bowl if you do not want seeds in your jam. Add the liquid to a heat safe bowl, or tupperware. Let the jam cool to room temperature, then place it in the refrigerator.
