Pot Roast Chicken Cacciatore
Serves 6 Prep 10 mins Cooking 1¼ hours

1 tsp MasterFoods® Garlic Powder
1.8kg Coles RSPCA Approved Australian Medium Whole Chicken
2 tbs olive oil
8 baby brown onions, quartered
2 carrots, peeled, coarsely chopped
Pinch of salt
5 garlic cloves, halved
500g jar Dolmio® Extra Red Wine & Italian Herbs Pasta Sauce
½ cup (125ml) chicken stock
½ cup coarsely chopped flat-leaf parsley
1 cup (150g) pitted kalamata olives
Crusty bread, to serve

1 Preheat oven to 160°C. Sprinkle the garlic powder over the chicken. Drizzle over half the oil.

2 Heat the remaining oil in a flameproof casserole pan or large ovenproof saucepan over high heat. Add the onion, carrot and salt. Cook, stirring, for 5 mins or until onion softens. Add the garlic and cook, stirring, for 1 min.

3 Stir in pasta sauce, stock and one-third of the parsley. Place the chicken over the vegetable mixture. Bring to the boil. Cover.
4 Bake, covered, for 40 mins. Increase oven temperature to 200°C. Uncover and bake for 20-25 mins or until the chicken is cooked through and golden.

5 Stir the olives and remaining parsley into the vegetable mixture. Serve with bread.
