The price of a whole boneless, skinless chicken breast is not real different from the price of a whole entire chicken. So it makes a lot of sense to just learn the basic, simple trick of removing the breast so that you can buy yourself a whole chicken like this. First thing we have to do is separate the leg so that the breast will come off nice and clean. And then the next thing we're going to do is feel this ridge with your finger. Set the knife on one side of the ridge and sort of slide the blade underneath the breast meat. And the whole trick is to just keep finding the bone underneath with the blade so that you don't end up separating a lot of nice meat from your breast. That just comes right off in your fingers. So there we go. There we've got a boneless, skinless chicken breast and then you end up with this middle piece here, which is the piece people call the chicken tender and for the price of this you've got all this, wings, legs, and thighs, and leftovers for stock and the whole deal. Voila.
