What happens if you turn an Irish potato pancake into a breakfast sandwich?
In this video I’m making what I’m calling the McBoxty — a breakfast sandwich inspired by the McGriddle but made with boxty, a traditional Irish potato pancake. Along the way I fell down a rabbit hole learning about the history of Irish food, how potatoes became such a central part of the cuisine, and why dishes like boxty have been staples for generations.
To round everything out I added sausage, egg, cheese, and a roasted tomato, mushroom, and bean sauce that accidentally turned into something I’m lovingly calling bean ketchup.
The result? Honestly… one of the best breakfast sandwiches I’ve made.
If you like food history, cooking experiments, and slightly chaotic kitchen energy, you’re in the right place.
