This creamy loaded baked potato dip is the perfect dish to gather around this holiday season and is a fun way to sneak some veggies in for your little ones.

Ingredients
8 oz sour cream
½ cup mashed potatoes
4 oz cream cheese, room temperature
1 cup shredded cheddar cheese
6 strips of bacon, cooked till crispy and chopped
¼ tsp onion salt
¼ tsp garlic powder
3 scallions, green tops cut thinly
Fresh veggies for dipping

Steps
Peel and boil potatoes for about 20 minutes or until soft. Drain and mash.
Preheat oven to 350 degrees F.
Follow direction on packaging to cook bacon (either oven, stove top, or microwave). Crumble into bits once cooled a bit.
In a medium sized bowl, mix together sour cream, cream cheese, and mashed potatoes until smooth.
Add ¾ cup of the shredded cheddar cheese, most of the bacon bits, and most of the scallions. Mix together.
Transfer to small casserole dish, top with remaining cheese
Bake for 30 minutes until the cheese is melted and bubbly around the edges.
Top with remaining bacon and scallions. Serve with fresh veggies to dip.
