This is a fantastic quick easy chicken recipe which is simply bursting with the flavors of Mexico and are amazing served up with warm tortillas. Please Subscribe for more cooking videos.
This video will show you how to make the sauce and prepare the chicken.
Chicken thighs are one of my favorite chicken cuts to eat. They are always tender and moist, and as a bonus they are always affordable.

Pre-heat oven 185° Celsius (365°Fahrenheit)

Ingredients
2 boneless chicken thighs or breasts
2 tablespoons Mexican seasoning
2 X 50 gram (1.7 ounces) slices Haloumi cheese
¼ cup white wine
¾ cup chicken or vegetable stock
1 cup cherry tomatoes, cut into halves
1 spring onion, thinly slices
2 teaspoons cornflour mixed with 1 tablespoon of water
Tortillas to soak up the delicious sauce
